Episode 24 Show Notes

Courtney:  Hi, I’m Courtney Uncooked and this is my dear sweet friend, Rebekah Morillo, and Rebekah is actually the videographer of the show. She does a great job filming and producing the Courtney Uncooked show. She’s also a great still photographer and she does all of my real estate photos and it’s just great.

Rebekah:  Thank you.

Courtney:  I just love working with you. And it’s just such a blessing that we get to work together, and it’s just not even work you know, we just have fun.

Rebekah:  It’s a lot of fun.

Courtney:  Yes.

Rebekah:  Yes we have a lot of fun for sure.

Courtney:  We have a lot of fun. So, I’m so glad to have Rebekah here today and we’ve been friends for about six years. We actually met at the East Coast Surfing Championship Bikini Contest because I love entering bikini contests and wearing little swimsuit dresses, you know, full dresses and just like to…

Rebekah:  She likes to have a lot of fun.

Courtney:  I do.

Rebekah:  And it brings a smile to your face.

Courtney:  I don’t take life too seriously.

Rebekah:  Yeah.

Courtney:  You know, you have to not take yourself too seriously, not take life too seriously and not be afraid to rock what you got. Because you know, maybe I’m not perfect, but I can go out there and have a great time and be entertaining. So, and isn’t that really what we all want ,to be entertained? So, thank you for being here today.

Rebekah:  Thank you for having me on the show.

Courtney:  Yes. Now tell me, Rebeka, in your business today, I’ve been asking every guest the same question, what have you done to adapt, adjust and accommodate to the current climate that we’re in with your business? What have you done to change?

Rebekah:  Well, one thing that I’m actually adding service.

Courtney:  Oh, you’re adding things?

Rebekah:  Yes.

Courtney:  Okay well there you go.

Rebekah:  I started offering 3D tours for… 

Courtney:  3D tours. Yes. I love those. Yes, that’s very necessary today.

Rebekah:  Yes, especially in today’s market.

Courtney:  Yes.

Rebekah:  People traveling from all around the world when they can travel.

Courtney:  Yes.

Rebekah:  And it makes selling homes a lot easier.

Courtney:  And it’s kind of like the next evolution like we’ve been face timing folks…

Rebekah:  Right.

Courtney:  Homes for years now and sending videos for years and this is just the next evolution, the next step up is the 3D home tours, they are bad, beep, they’re awesome. So, yay. I’m glad, thank you for doing that because that’s just going to help me do a better job. So, you’re always just keeping up and on the cutting edge. So, what I’ve done is actually created for you, just for you, Rebekah’s Reverse Salad. And so, this salad is in reverse because it’s going to have the green dressing on the top, where usually we have greens on the bottom with your lettuce, whatever you decide to use, we’re not going to have anything else green in this salad, except for the dressing, which is going to be on the top. So, we’re going to do it in reverse.

Rebekah:  Nice.

Courtney:  And the bottom of the salad is just going to be like a layer of cauliflower. And I like to do just little bite-sized pieces of cauliflower, just like that. So, I’m going to let you…

Rebekah:  Thank you.

Courtney:  Do your layer just like that. And then you can, you know, dress it up with some tomatoes. Hold on to that. Let’s just go in order here. So, we’re just going to put a rainbow of color on this salad, at the bottom of this salad.  Okay, so that’s everything. Anything you want to add to the salad that’s not green, feel free to put some hemp seeds on the top, come crinkled up and crunched up nuts would be good. So, there’s our salad and then now we’re going to make a beautiful, delicious green dressing. And we’re going to start with two and a half cups of organic zucchini, which I’m going to dump into the Vitamix here. And then I’ve actually got a tablespoon and a half of cilantro. So, this is how I’ve had to adjust with my business is that I love, you know me, I love fresh herbs.

Rebekah:  Right.

Courtney:  I love fresh cilantro, but I couldn’t get any at the store today. They just didn’t have it. And I asked all my neighbors and my neighbor, Nick, all he had was some dried cilantro, which is perfectly fine. I’m going to make do, I’m going to adjust. So, this is a tablespoon and half of dried cilantro. If you can’t get the full cup of cilantro. So, also, I’m adjusting because I have ordered a tower garden and now I’m going to have my own herbs at my house.

Rebekah:  Very nice.

Courtney:  So, hopefully, I don’t ever need any dried herbs again, anything I need, I can just pull from my tower garden. But for now, you know, if you only have dried herbs, if you don’t have a tower garden, that’s fine. Whatever you have on hand we have to adjust. So, I’m just going to add those.

Rebekah:  Right.

Courtney:  And then we’ve also got a little bit of yellow bell pepper in the dressing as well. We’ve got a cup in the dressing. And then we’ve got a mixture here of some salt, some cumin, some onion powder, some cayenne pepper, again, you’ve got the onion powder instead of an onion. Yeah. So, we’re just going to dump that in there. And then dun dada dam, we’ve got a cup of avocado meat and I know you love avocados and tell me, Rebekah, how did the avocado feel after a good workout?

Rebekah:  How?

Courtney:  Hardcore. Alright, so we’re just going to add the avocado here, then I’m going to add some…a tablespoon of wheat-free tamari and hopefully we’re going to have enough liquid here, you know, from the zucchinis that we don’t have to add any liquid or any water, but we’re going to see and instead of pulsing this time, I’m going to let this go. Okay, so I think I will add a little bit of liquid. Sometimes you need water, sometimes you don’t.  You just never know, this time we do.

Rebekah:  There you go. Presto.

Courtney:  Alright, now I’m just going to take this jar,  We can actually just pour this on the salad too. You haven’t used that yet.

Rebekah:  No, I haven’t.

Courtney: Just pour it right on the salad. 

Rebekah:  Want more?

Courtney:  Yeah. Okay. That’s good. Then we’ll give you some.

Rebekah:  Yep.

Courtney:  I’m going to let you hold that. And so, we’re putting our green dressing on the top. Oh my gosh. This is so good. Wait till you try this. This is Rebecca’s Reverse Salad. So, get a bite, Rebekah, try to get everything. That’s a little hard though, isn’t it? Okay.

Rebekah:  That’s very good. Very creamy.

I really love the avocado in the dressing but when your salad is done it’s going to be depressing. No, you don’t need a stove or an oven to cook.
