Episode 31: 3 Ingredient Peanut Butter Balls with special guest Handyman Mike Rush

Courtney: Hi I’m Courtney Uncooked and this is my dear friend Mike Rush. And Mike is like my guardian angel. He is always getting me out of trouble and out of jams and saving my butt, but I manage a lot of properties and Mike helps me do all my work and he always makes it happen. And you know, he’s like that in real life too, because we were friends for so long before we worked together.  And you know, I can tell you you’re exactly how you were when we were friends. You’re just so giving and loving and I’m just a big fan of Mike and I’m glad you’re in my life, especially at this time. And so, ladies, if you have a honey-do list, we have Mike here, he’s your rent-a-husband. Just give him a call and he will go through your list and do a fantastic job for you.So, yeah. So how have you been doing Mike through this crazy time and how are you handling everything?

 Mike: I’m doing well.

 Courtney: Okay.

 Mike: As I said, I’m grateful to be here with you today.

 Courtney: I’m so glad you’re here.

 Mike: I’ve been able to stay busy and have a routine…

 Courtney: Yeah.

 Mike: And I’m focused on…

Courtney: Oh yeah. You were telling me you wake up the same time every day.

 Mike: Yep.

 Courtney: You wake up at what time?

Mike: 8:00 AM.

Courtney: Okay, eight o’clock every day.

Mike: Yeah. I don’t use an alarm, no.

Courtney: Okay.

Mike: No, but you know, I just feel like I’ve found something that works for me that’s comfortable for me and I think that’s the secret to being happy. Definitely having a purpose.

Courtney: Yeah.

Mike: And a focus.

Courtney: Well you help a lot of people. I know you just put in Rachel Kemp’s flower beds and gardens and sandbox for G and you’re just awesome. So…

Mike: I’m definitely here to help and please reach out if you need something done, I’ll be more than happy to take a look and see what I can do for you.

Courtney: Yeah. And so, I know you’re always running around, you don’t have a lot of time to eat. So, I created these world-famous three-ingredient, peanut butter balls, and you can take them with you during the day and pop one and it’s like a meal and two it’s like a dessert. So, these are so simple to make. There’s only three ingredients. And so, we’ve got two cups of raw peanut butter and peanut butter is so easy to make Mike. You’re just going to soak your nuts and then drain them and then dehydrate them, get them dry. And then once they’re dehydrated and completely dry, just put them in your food processor and it makes nut butter out of them. Have you ever tried that? Making your own nut butter?

Mike: No. I’ve never done it.

Courtney: No? It’s fun. It’s fun. But you have to watch the food processor because in one second it can be nice and fluffy and then if you let it go too long, it turns runny. So, you really have to keep your eyes on it, and depending on your peanuts and the moisture and the consistency, it can take anywhere from seven to 12 minutes, in the food processor so you have to be present when you do that. I’ve learned that the hard way. Okay, so we’ve got two cups of peanut butter, and then we’re going to add just three fours cup of coconut flour and then half a cup of agave syrup and that is it, my friend. We’re just going to mix up these three things and then we’re going to make them into like little golf-sized balls and put them on that parchment paper right there, and then pop them in the fridge for at least 30 minutes and that’s it. Yeah, they’re going to be so good. So, do you like peanut butter?

 Mike: I do.

Courtney: Do you know what? I actually feel sorry for people who are allergic to peanut butter because it’s so good.

 Mike: It’s tasty.

Courtney: I can’t even imagine not being able to have peanut butter, but you do have to be careful. Alright, so that’s it, see that?

Mike: Wow.

Courtney: It mixes right up and just going to have nice clean hands here, just going to take it out, make a nice ball out of it. And if your hands ever stick together, like mine are sticking together, see, I knew better than this Mike, you can actually take coconut oil and rub it on your hands and then it won’t stick. I actually have it right here. I knew I should’ve done it, but I took a shortcut Mike, and you see what happens when you take a shortcut.

 Mike: You can’t cut corners.

 Courtney: I know you don’t cut corners, my friend, you are A1 quality plus-plus, so…

 Mike: Do it right.

 Courtney: Let me do it right. Let me do what I should have done, right? Oh gosh. Okay.

 Mike: You got it?

 Courtney: I got it. I know if I didn’t have it, you’d get it for me. Alright. So, just going to take a little bit of oil…

 Mike: This seems really simple.

Courtney: Super simple, super simple. That’s going to do it. And then too, a little bit of oil on the outside is going to help if you want to roll it in cacao nibs or coconut flakes or both, or dip it in some blueberries and have like some peanut butter and jelly, a little bit of oil to make it sticky. So that’s it. You just make it all into balls and then put it in the refrigerator for at least 30 minutes. So, I’ve done that here and I’ve got these balls already done. Aren’t they beautiful? Okay. So, what do you think, Mike? Are you a dipper? Would you want to dip or do you want to just eat it how it is? Or put blueberries? What do you think?

 Mike: I like the blueberries.

Courtney: You want the blueberries?

Mike: Yeah.

Courtney: Okay, here you go. And you just mash it in the blueberries or put a blueberry on top, whatever, you know, we all have our style, but isn’t that so fun? Look at that. It’s like peanut butter and jelly. Yeah. So good. I like them just plain. I don’t think you need anything else. Isn’t it good? Well, it’s not good if you’re putting it down, Mike. I love it. It just inspires me. You know, I love easy recipes, three ingredients, it just doesn’t get any better than that. That’s the way it should be, you know. I see your feeling inspired.
