Episode 32: Chocolate Nice Cream with special guest Jess Black

Courtney: Hi, I’m Courtney Uncooked and this is my dear sweet friend, Jess Black and I’m so glad to see Jess in the flesh today because I’ve been following your Facebook and your social media and I just love it. I mean, this woman is a freedom fighter, a true seeker, she’s a critical thinker, she’s got this shirt that says trust nobody but your mother.

 Jess: Question everything…

 Courtney: Right, question everybody but…

 Jess: Except your mother.

 Courtney: Question everything except your mother.

 Jess: And sometimes question your mother.

 Courtney: Even your mother. Yes, especially my mom. Love you mom. So yeah, I’m just really glad to have you here today.

 Jess: I’m so excited.

 Courtney: And so just tell us, you know, how have you been surviving this crazy plandemic?

 Jess: Okay. I’ve been ordering so many things online.

Courtney: Okay.

Jess: Like so many…even my groceries I order online. 

Courtney: So, we call that retail therapy.

 Jess: But in a good way.

 Courtney: Yes.

 Jess: For like healthy things.

 Courtney: Yes.

 Jess: I’ve ordered probably over 32 books.

 Courtney: Wow. Good. Okay, so you’re becoming a genius.

Jess: Pretty much. I’m boosting my immune system and my IQ.

 Courtney: Okay.

 Jess: I’ve just been eating really healthy…

 Courtney: Alright.

 Jess: And getting outside vitamin D we need that.

 Courtney: That’s great advice, yep.

 Jess: That’s how you cannot get COVID.

 Courtney: Okay, good.

 Jess: And zinc lots of zinc.

 Courtney: Alright. Well, I’m really proud of you and I’m glad to have you here. And so I got this recipe from my friend, Sam Kern, and I’m so sad he’s not here today because you and him would get along great.

 Jess: I feel like I need to meet him.

Courtney:  You guys would be like best friends instantly, but he’s been wanting to be on the show for a while, but he lives so far away and our schedules just always conflict. So, he said, show this recipe and a picture of me and I’ll be good.

Sam rapping on a video: It’s Courtney Uncooked and it’s your boy Sam Pot. Trying to come on the show and spit a little flow and whip something up in the kitchen. You know? So, what’s it gonna be to be? The two of us, can’t you see I got this avocado recipe? It’s from my main man, Tom Brady. Alright, your move.

Jess: I’m excited.

Courtney: We’re doing that for Sam today.

Jess: Thanks Sam.

Courtney: Yeah, thanks Sam. And this chocolate avocado ice cream is delicious. Okay, so it’s so easy to make vegan, raw vegan ice cream with frozen bananas, throw in some cacao, it’s good. This is next level. This is deep, dark rich chocolate. You’ll never be able to tell this is vegan or a banana. I mean, it… this is when you’re not messing around.

Jess: I’m jazzed for it.

Courtney: Yes, yes. So, you’re going to…

Jess: Ice-cream is like my weakness.

Courtney: You’re really going to enjoy this. And you know, do you know how Reese enjoys her ice cream? Witherspoon. Duh Jess, hello? Ha. So, anyway, we’re going to make this delicious ice cream for you today and you’re going to love, your favorite part is going to be opening this coconut. You’re going to be able to get all your frustrations from the entire world out on this coconut.

 Jess: Is this it?

 Courtney: Yes, that’s it. Yes.

 Jess: I can’t wait.

 Courtney: So, we’re going to just… All you have to do is just put all the ingredients in the blender and blend it up, and this is going to be the hardest thing we do is open this coconut, but with our handy tools here, it’s not going to be that hard. So, we’re just going to put some dates and these dates I did soak, so they’d be easier…

Jess: Okay.

Courtney: On the Vitamix. We’re just going to put these dates in here and then some cacao powder, we’ve got one cup of cacao powder.

Jess: Measure that. It’s one cup.

Courtney: Yes, it is one cup. It looks like much more, but it’s not. And cacao powder is great, it’s just full of vitamin B6 and folate…

Jess: Yes.

Courtney: Whatever folate is, it’s full of it. People really like the folate.

Jess: Folate is good for you.

 Courtney: And then we’ve got a whole avocado.

Jess: Those have a lot of folate too.

Courtney: Yeah. Avocados…

Jess: A ton!

Courtney: Are delicious.

Jess: So if you don’t like dark green, leafy vegetables, get an avocado.

Courtney: Avocados are just nature’s miracle. I went to Mexico one time and stayed at an all-inclusive resort that there was a guy making guacamole the entire time. I ate nothing but guacamole and chips for seven days.

Jess: When in Mexico.

Courtney: Yeah, when in Mexico.

Jess: I would have too.

Courtney: So, then we got some cashews which I just soaked overnight. And I’m going to strain those off with my very clean hand, of course. Just drop those in here and then I’m going to let you get to opening this coconut.

Jess: Oh, it’s my turn?

Courtney: Yeah.

Jess: Okay.

Courtney: So, you’re just going to put this on here.

Jess: Alright, I’ve never done this before.

Courtney: And just think of everything that frustrates you.

Jess: And just bang it out. I got this.

Courtney: Get it girl. This is your moment. Tell them Jess.

 Jess: This is really hard.

Courtney: Tell them!

Jess: Should I tell them what I’m frustrated about? Am I breaking it?

Courtney: Get it out! Give it a little bit more. You’re in luck. Oh, see you want to turn it to get that..

Jess: Okay, I didn’t know to turn it.

Courtney: Get that.

Jess: Alright. We got this. This is really like… is this specifically for this?

Courtney: It is.

Jess: This is what this tool is for?

Courtney: Okay.

Jess: Okay how about that?

Courtney: Sure. It’s takes me like 2,500 times.

Jess: Courtney I’m a beast.

Courtney: I mean…

Jess: I’m a beast.

Courtney: You were frustrated…

Jess: Is this water?

Courtney: Look at this.

Jess: This is real coconut water.

Courtney: Now this is how you safely and easily open up a coconut my friend.

 Jess: This literally how they make coconut water? They just…

 Courtney: That’s it, that’s it.

 Jess: That’s a lot of work to make one jar of coconut water.

 Courtney: Then we’ve got our little scraper tool, go around here. Give it a try.

 Jess: Okay.

 Courtney: What do you think of it?

 Jess: Oh my gosh.

 Courtney: There’s nothing better than that. You don’t even want regular coconut water ever again.

Jess: Not ever. I don’t ever want to buy, like…

Courtney: They put a lot of sugar usually in coconut water.

Jess: This is delicious.

Courtney: Does that need any sugar at all? No. Perfect.

Jess: It’s so good.

Courtney: Perfect. So, I got this whole toolset and you can get it from courtneyuncooked.com, that just easily, you know, makes you a hero and then you just get the meat right out. I mean, it cannot be simpler. So, let’s get a little bit more don’t want anything to go to waste, you know, coconut…

Jess: So, is that what they make the shaved things out of? That part?

Courtney: Yes, that’s the meat, so that’s it.

Jess: It’s not very much in one…

Courtney: And some water. Definitely need some water. You know what else I should have probably done is used the date water, but I threw it out. But so we’ve got some water. This is it. Blend it up. You got to blend this a lot. Because you want it a nice creamy consistency.

Jess: I’m so impressed with how dark it is.

Courtney: Yeah.

Jess: I did not think that it would look so good.

Courtney: You never want to under blend this. Give it a licksy.

Jess: Yeah, yeah. Oh yeah. Okay. Sam Kern…

Courtney: That’s what I’m saying. Sam.

Jess: Sam.

Courtney: Look at that.

Jess: So good. It’s like chocolate whipped cream.

Courtney: Yeah.

Jess: That like, no like chocolate mousse, but better.

Courtney: Yeah. So, it could be like a pudding or a mousse, or…

Jess: If you freeze that.

Courtney: You’re going to freeze it for an hour. This is just straight-up vegan power right here.

Jess: Straight up.

Courtney: So that’s it. You want to give a…

Jess: Yep.

Courtney: A go?

Courtney: Yeah.

 Jess: Okay.

Courtney: Good job friend.

Jess: Am I doing good? How’s this presentation, Courtney?

Courtney: It is good.

Jess: You do not want to waste this.

Courtney: Piece of coconut on the side.

Jess: Okay.

Courtney: Little accent on the top, put that on the side.

Jess: That’s so cute!

Courtney: All right. Let’s give it a go. Now, just imagine it’s frozen for an hour.

Jess: Alright, cheers.

Courtney: To health and wealth.
