Episode 34: Sammi’s Surprise Butter Cups with special guest Sammi Lizzotte

Courtney: Hi guys. It’s Courtney Uncooked with my dear friend Sammi and stay tuned, we’re about to show you how to make Sammi’s Surprise Buttercups. They are delicious. And Sammi is going to sing, play guitar and ride the indo board at the same time. Don’t go away.

Courtney: Hi I’m Courtney Uncooked and this is my dear friend, Sammi…

Sammi: Hi.

Courtney: And personal trainer. So, if you’ve ever wondered, man, how does Courtney Uncooked have such a smoking hot body?  it’s from her.

Sammi: You do the work girl! You bring it.

Courtney: You know, I put it in…

Sammi: You bring it.

Courtney: I put it in. So, Sammy is a trainer at Wareings Gym, which I’ve gone to for 15 years. And Wareings is actually the oldest gym in America over a hundred years old. And I think there are some people who’ve been going there since they were babies.

Sammi: Yes.

Courtney: I mean, there are all ages there. So, it’s a great place. It’s like one big happy, extended family and I just love it. So, you fit in great there, I’m so glad you’re there. She’s also a yoga teacher, she’s a musician before we get started making this amazing recipe…

Sammi: Yeah.

Courtney: You know, how are you getting through this period? Like what are you personally doing to get by and then in your business, what are you up to?

Sammi: Yeah, so for business…

Courtney: Because the gym was closed for a long time.

Sammi: Right, right. We had to close for a while. So, we’ve been doing virtual classes online through zoom.

Courtney: Okay.

Sammi: So that’s been a success for…

Courtney:  Awesome.

Sammi: We’ve opened the gym back up…

Courtney: Yeah.

Sammi: But for a little while we’ve had to zoom, so that’s that. And personally, I’ve just been resting as much as I can…

Courtney: Good for you.

Sammi: Being outside…

Courtney: Good for you.

Sammi: Gardening, growing some veggies…

Courtney: You’re always resting, no matter what.

Sammi: Well…

Courtney: You’re just… that’s how you look so beautiful because you’re just chilling.

Sammi: Thanks.

Courtney: Like all the time. Yeah, I like that. You remind me sometimes to just slow down, take a breath…

Sammi: Yeah.

Courtney: Everything’s going to be okay.

Sammi: That’s right.

Courtney: Right. So, thank you.

Sammi: You’re welcome.

Courtney:  All right. So, tell us about about what we’re going to make today. I call these Sammi’s Surprise Buttercups because you never know what you’re going to find inside. Like what was your inspiration? How did you come up with this?

Sammi: Well, a friend, a good friend showed me the ropes at dinner one night. She just pulled out some ingredients and in 10 minutes, voila, delicious little cups.

Courtney: Okay. So, you were like, give me that recipe…

Sammi: Yeah.

Courtney: Because I got to give it to Courtney Uncooked.

Sammi: Yeah.

Courtney: Here it is. I got to give it to you.

Sammi: Yeah. And you can decide what she want in them. So, there’s…

Courtney: Yeah.

Sammi: A variety of options.

Courtney: Awesome.

Sammi: Yep.

Courtney: Alright. Well, what do we need to do?

Sammi: All right. So, we’re going to mix first, the nut butter, which we’re using peanut butter today.

Courtney: Yes.

Sammi: And we’re going to put…

Courtney: Five tablespoons of peanut butter. You can do almond butter, macadamia nut butter, any kind of butter.

Sammi:  I haven’t actually tried the peanut butter. So, we’re going to see how this is today, extra yummy.

Courtney: Yeah. There’s just something about peanut butter and chocolate it just takes you back to a simpler time. One of your surprise ingredients in your peanut butter cups are bananas and it’s such a genius idea. I love the way the texture it feels and the taste is just amazing.

Sammi: Yes. So…

Courtney: And then I just showed Sammi how to do this, how to melt oil without cooking it. So, we just filled up a bowl here with some hot water from our Breville water heater. And that’s it.

Sammi: Yeah.

Courtney: So, it should be a nice liquid for you.

Sammi: This is our coconut oil.

Courtney: Yeah. We’ll just pour that right on in there.

Sammi: Make it nice and fudgy.

Courtney: Yeah.

Sammi: Alright. So, the next is…

Courtney: Cacao powder.

Sammi: Yeah, we’re doing three tablespoons of cacao.

Courtney: Yes, we are.

Sammi: And we add four tablespoons of coconut oil. Substitute that for butter if you prefer but I like coconut oil.

Courtney: You know, cacao powder is so good for your heart.

Sammi: Yes.

Courtney: That heart health that is promoted from cacao powder is just great so…

Sammi: It is.

Courtney: Yeah. It’s very healthy.

Sammi: High in antioxidants as well.

Courtney: Yes, yes.

Sammi: All right. So, we’re just going to stir this up.

Courtney: And did you know that cacao powder has more calcium than cow’s milk? Ewww, cows milk, but yeah, so it’s tons of calcium in there and it’s got iron, magnesium, it’s full of antioxidants, cacao powder is like a superfood.

Sammi: Yeah.

Courtney: You know, and it also helps with depression and stress, which is why we’re drawn to chocolatey things when we don’t feel good because they actually make us feel better.

Sammi: Right.

Courtney: Actually, helps with depression. So, feel good when you’re eating these surprise peanut butter cups…

Sammi: Yes.

Courtney: Don’t feel guilty at all. Oh. And then I loved that you added chia seeds, a tablespoon of chia seeds. I’ve never had chia seeds in peanut butter cups before. So…

Sammi: Yeah.

Courtney: I’m excited to try that today.

Sammi: You give it a little crunch.

Courtney: And we’re doing a tablespoon of agave nectar. And that’s the thing about these, you know, these aren’t the picture of health, but they’re a hundred times healthier than the peanut butter cups, you’re going to buy in the store with all kinds of preservatives and chemicals in them. Yes, they still have oil and they still have peanut butter and they’re still fattening, but they’re just a little bit fattening and it’s all from good fat…

Sammi: Yes.

Courtney: And there’s no chemicals and crazy stuff in them. So, it’s really important to be able to make your own. Ooh, are we already ready?  Did you do a pinch of salt?

Sammi: I didn’t yet…

Courtney: Yeah, okay.

Sammi: Go for that.

Courtney: And then can I do two pinches of salt?

Sammi: Yeah

Courtney: Okay.

Sammi: Just for you.

Courtney: I just love the taste of salt in desserts because I think it really brings out the flavor and accentuates the sweetness.

Sammi: So, I’m going to hand that to you.

Courtney: Okay. So…

Sammi: We’re going to fill the cups just halfway because we want to put some surprises in the middle.

Courtney: Gosh.

Sammi: Yeah. And once we put them in the fridge or the freezer that coconut oil is going to harden.

Courtney: I call her the Cracker Jack queen.

Sammi: You never know.

Courtney: You never know what you’re going to get with this one.

Sammi: What’s going to be in there. Yeah.

Courtney: I love the banana. I mean, I just love that.

Sammi: One banana. Alright.

Courtney: And then…coconut.

Sammi: Coconut.

Courtney: Oh raisins. You can’t go wrong with raisins. Raisins and chocolate are just, you know…

Sammi: Raisin nuts.

Courtney: Secret best friends. Raisins and chocolate…

Sammi: Yeah.

Courtney: Cacao powder. And then of course it’s always going to be good with some Terrasoul cashews.

Sammi: At this point, you can fill the rest of the cup with your chocolate mix.

Courtney: And this recipe you said makes about 12?

Sammi: Right.

Courtney: And now we’re going to stick these in the freezer for what would you say? 10 minutes?

Sammi: Yeah.

Courtney: Okay. All right. Well, I did that last night for you my friend and so here they are.

Sammi: Excellent.

Courtney: Yes, these are Sammi’s Surprise Buttercups. You said 10 minutes. I counted like five minutes that took to make. All right. So, I’ll be the judge Sammi. Let me see.

Courtney: Crowning moment. Oh, these are so good. Oh my gosh, that’s good. 

Courtney Singing: Making surprise butter cups with my girl Sammi. They’re my new favorite thing, oh, they’re really my jammy. You never know what you’re gonna find inside because there’s are all types of things that she likes to hide. It could be a banana or a coconut flake.
