Episode 35: Kevin’s Raw Glazed Donut Holes with special guest Kevin Demant

Courtney: Hi, I’m Courtney Uncooked and this is my dear friend, Kevin and Kevin is one of my very best guy friends and he’s a single dad of three beautiful girls who I love dearly. And I think that’s why you’re so in tune with women, I mean it’s just great. I love having you on the show today. Kevin owns an awesome business called MATV and Kevin, tell us a little bit about your business and what you’re doing to survive and thrive during this crazy time.

Kevin: So, we are a digital mobile billboard company.

Courtney: Right. He has trucks with billboards on both sides that are really cool.

Kevin: Yes. And we operate at events and we also operate for advertising as well for different clients. So essentially what happens is our clients contract us to go to advertise at said location, whatever benefits them and that’s basically how it is.

Courtney: Cool. So, what are you doing personally to make it through this time?

Kevin: Personally? I’m actually enjoying my time. So, I have my three daughters as you mentioned, but I got my son to which thank God we have a little bit of a balance there in my house because it’s a lot of women in my house. So yeah, so we’ve been spending a lot of time together doing a lot of different things. You know, we travel to see family, we spend time at parks, beaches and basically just spending a lot of time just building up our core family values and really enjoying ourselves. So…

Courtney: I see you doing it and it’s awesome. Well, hi girls wish you were here. But I’m going to teach your dad how to make an amazing raw vegan donut because I know you guys like donuts, your Italian, you know, the wedding cookies, the donuts, so I’m going to teach you how to make this and I think you’re really going to like it Kev. And it’s super easy to make the donuts are just five ingredients and then the glaze that goes on them, it’s just three ingredients and the glaze is optional. 

The donuts are going to be delicious, just how they are. And so, what we’re going to do is we’re just going to use one cup of oats, rolled oats, which technically aren’t raw because they’ve been steamed, but you can use steel-cut oats if you’re a raw diehard and keep this recipe raw. So, we’re just going to do one cup of oats in my amazing Breville, 626 sous chef processor, this thing is awesome. I’m just going to put a cup of oats in there and then we’ve got a cup of cashews, which we’ve soaked overnight and so I’m just going to drain them through my very clean fingers, Kev.

Kevin: Yes.

Courtney: And do you know why we soak our nuts, Kevin?

Kevin: Why do you soak your nuts Courtney?

Courtney: We soak our nuts to get off all the enzyme inhibitors and take nuts from an acidic state to actually almost alkaline when you soak them. Yes. Yes. And they’re just easy to digest and they’re great.

Kevin: Interesting.

Courtney: So, you always want to soak your nuts, your raw nuts overnight if possible.

Kevin: Okay.

Courtney: All right. And then we’ve got a cup of pitted dates, very important that you get the pits out Kev, do not leave that step out or you will not be having a good day. So normally I would tell you to soak your dates and then they’re easier on the food processor or on your Vitamix. But today for these donuts, I do not want you to soak your dates overnight or for any period of time because they’re really going to help hold the doughnut together. So we’re just going to put a cup of dates in here and then you know, these are going to be vanilla glazed donuts so we’re just going to add a teaspoon of vanilla and then a fourth of a teaspoon of salt, you know, salt in a sweet dessert-like dish is always going to enhance the flavor and actually bring out the sweetness. So, I remember when I first started cooking desserts or un-cooking desserts, I thought that’s weird, there’s salt in everything and that’s why. It just gives it that pop. So, this is it Kev, just these five ingredients.

Kevin: Okay.

Courtney: All right. We’re just going to let it go. We can always dance because I know how you love to dance Kevin. He doesn’t he hates to dance. See it’s starting to become…

Kevin: There it is.

Courtney: Whoop there it is. It’s doing it.

Kevin: All right.

Courtney: It’s almost starting to look like little donut holes passing us by. All right, so now we’ve got the dough for our donuts. And Kevin, what do you call a Jamaican donut?

Kevin: What do we call a Jamaican donut?

Courtney: A cinnaMON.

Kevin: Okay.

Courtney: Alright, just take a tablespoon and it doesn’t have to be exact, like a little heaping tablespoon of dough. While we’re doing this, I’m going to have you start working on our glaze. We’re going to turn on our Breville water heater and get some warm water and we’re going to put the water in that bowl and put the oil in it and that’s just going to naturally melt it.

Kevin: Okay.

Courtney: Actually, in this bowl, sorry. You’re going to put the water in this bowl.

Kevin: So, you want me to put the water in this bowl?

Courtney: See how cute these are? These little donut holes.

Kevin: They are.

Courtney: Oh my gosh, they’re delicious. So good. Alright, so that water should be hot enough, so you’re just going to take it off and then pour the water right around that coconut oil and let it do its magic. It’s going to naturally melt the coconut oil for us. We’ll have you pour that in the other bowl and then with that coconut oil, that’s just three tablespoons, so it’s not a lot for all of these donut holes. You’re just going to pour it right in there and then you’re going to add a tablespoon of agave and a fourth of a teaspoon of vanilla, mix it all together and that’s our glaze. I mean, it’s so easy. Just five simple ingredients for the donuts, three simple ingredients for the glaze.

Kevin: The agave?

Courtney: Yeah, that’s it. It just pours it right in there.

Kevin: Okay.

Courtney: Knock, knock.

Kevin: Who’s there?

Courtney: Justin.

Kevin: Justin who?

Courtney: Justin time to make donuts.

Kevin: That one’s good. I like that one too.

Courtney: Yep. Okay. And then you’re just going to put the vanilla in there and then just mix it all together. I do have a warning about these donuts.

Kevin: Uh-oh.

Courtney: They make your clothes shrink, Kevin.

Kevin: It’s true. Just looking at it is making my clothes shrink.

Courtney: Yes. Just looking at these will make your clothes shrink.

Kevin: I’m excited.

Courtney: Alright, so your glaze looks good. So we’re just going to roll some donuts around it. I mean, how simple was that Kev?

Kevin: That’s actually pretty simple.

Courtney: Yeah. So, I thought that you would like this because you know, at all your events and things.

Kevin: It’s pretty simple

Courtney: I know you’re gone for a long time and these are a great snack…

Kevin: They really are.

Courtney: That’ll just fill you up. 10 minutes in the freezer, oh yeah, those look good. So, you can see the nice glaze on them. Those look great.

 Kevin: They do.
