Catherine’s Pampered Pesto with Zoodles and special guest Catherine Wilson

Courtney: Hi, I’m Courtney Uncooked here with my friend Catherine and Pampered Chef consultant. And today we’re going to show you how to make raw vegan Pampered Chef pesto. It is absolutely delicious. Stay tuned.

Courtney: Hi, I’m Courtney Uncooked and this is my dear sweet friend, Catherine and Pampered Chef consultant. Catherine’s just been making my life easier for, I don’t know what, eight, seven, eight years now. She’s a dear sweet friend and I love Catherine because I have never heard her say a negative thing about anyone, no matter what they’ve done, Catherine sees the good in everyone.  And it’s just a beautiful gift that I try my best every day to do. Because the truth is, we all have a whole lot of good and a whole lot of bad in us, and I want people to see my good and so I always try to see the good in others. And that’s something that Catherine, in addition to using crazy cool kitchen tools over the years, you know, you have really just shown me through example.  You really walk the walk and you’re just a beautiful soul, you are friends with everyone, no conflicts, I mean, you’re just awesome, Catherine, and I’m glad to have you here today. You know, I went to chef school and I kind of like forgot, you know, I got jazzed up about all these big machines and the Vitamix and the big food processors. And I really forgot where I came from because Catherine came back, brought it back to basics and these tools are phenomenal, easy to use, easy to clean, manual, no plugging in, no electricity, you can use them when you’re camping and it’s just been amazing.  So, thank you for coming on the show today because they’ve changed my life. Again, you just kind of forget over the years, but I love these tools. And so, every month with Pampered Chef, they have a recipe of the month that they email to me and this month was vegan. And I said, yes, Catherine, the recipe is vegan, let’s go.  And she said, well, the recipe’s cooked. I said it doesn’t matter, look at it. You don’t have to cook that. She said you’re right, let’s do it. So, you know, it started off cooked, but we made it raw and it’s delicious. So, I cannot wait to show you this, but before we get started, Catherine, how are you surviving this crazy time my friend? Give us some advice. What do we need to do?

Catherine: I’m just embracing online virtual parties…

Courtney: Okay.

Catherine: Picking up the phone and reaching out to my friends and…

Courtney: Yeah.

Catherine: Just getting outside. Doing something physical.

Courtney: Outside is very key. I try to go outside every day, no matter what the temperature, rain or shine, I feel like if I go outside, then it’s a good day. If you can make it outside for at least 45 minutes to an hour, that’s a good day.

Catherine: Yeah.

Courtney: Okay. All right, Catherine. Well, let’s get started with our Pampered Chef pesto and yeah, they actually did cook the zoodles. I’ve never even heard of zoodles, …

Catherine: Yeah.

Courtney: Zucchini noodles being cooked, but I mean, I’m sure they’re delicious.

Catherine: They are.

Courtney: But we don’t need to do that.

Catherine: But you lose the nutrients so…

Courtney: You do. You lose all the nutrients, the vitamins and the minerals. And so today we’re going to keep it raw and you know, back to basics. This Pampered Chef spiralizer is amazing and what you want to do is just cut your zucchini or your squash into halves or thirds and just make sure that it’s straight and just put it in there and that’s it. I mean, it’s just so easy and I like this because it’s straight up and down so it’s really like gravity is working in your favor and I just love it. Catharine: And it’ll spiralize everything…

Courtney: Yes.

Catherine: But this one little piece.

Courtney: Yeah. And then you just eat that.

Catherine: Like a snack.

Courtney: Yeah, like a chip.

Catherine: There you go.

Courtney: Okay. So, and we’ve got some carrots.

Catherine: Spiralized carrots. Yup.

Courtney: You did these before you got here.

Catherine: I did.

Courtney: You did these in here too?

Catherine: They work on the spiralizer as well. You want to get a nice thick carrot and use the thick end and make sure you cut it smaller because it will tilt on you, going up and down but…

Courtney: Okay, I love it. Looks great.

Catherine: And then you use the broccoli.

Courtney: Yes. Broccoli florets on top. I love the broccoli.

Catherine: Awesome, awesome.

Courtney: Again, they cooked all this. There’s no need to cook that.

Catherine: And then we have the “close and cut” which has our tomatoes in it. And rather…

Courtney: Oh, yeah.

Catherine: …than cutting each tomato individually, we’re going to cut them all at once.

Courtney: And you can use this machine with grapes, brussel sprouts, cherry tomatoes. It’s great, Voila!  Look at that, I forgot about that. Now that would have just taken me 10 minutes because I’m a perfectionist. Look at that. So beautiful, so easy. Okay, so now we’re going to make what I call our Pampered Chef Pesto in this manual food processor, no need to lug out your big equipment and plug it all in and look at this. I mean, I’m actually going to the Pranic Raw Food Festival next weekend and I’m going to take this with me because you can take it camping, on the go, on the road, I love this thing. Sorry, I know you wanted to use that but…

Catherine: That’s alright. So, we’re going to dump our walnuts in here.

Courtney: Walnuts. The dry items first in our manual processor.

Catherine: Yes we’re going to do the basil and then the walnuts.

Courtney: Basil. I just love this little thing. It’s just so easy. And then we’re going to add some avocado.

Catherine: It calls for half an avocado, but we’re going to put a whole avocado because Courtney love’s avocado.

Courtney: Catherine, what do you call two male avocados who are best friends?

Catherine: I don’t know, but tell me, Courtney.

Courtney: Avocabros. That’s funny Catherine.

Catherine: It is hilarious.

Courtney: You are doing a great job.

Catherine: And then we have our lemon.

Courtney: Bravocado, bravocado.

Catherine: And then our olive oil.

Courtney: Tough crowd. Tough crowd. So, we’ve got…

Courtney: This garlic press.

Catherine: Yeah, don’t forget the garlic.

Courtney:  And the cool thing about this is you don’t even have to take the skin off and look at this. It’s going to squeeze out the garlic from the bottom without the…

Catherine: Without peeling it.

Courtney: Skin. Yeah, without even peeling it. Boom, done. Love it.

Catherine: Yay I love garlic. It makes everything taste so fresh.

Courtney: And so easy to clean. All of this stuff is so easy to clean. And then I’m just going to go ahead and mix this up a little before we put the sauce in as well. This manual food processor is like magic. Presto.

Catherine: Take the blade out because that’s kind of sharp.

Courtney: Dump this on our zoodles.

Catherine: Scrape all the goodness out with that.

Courtney: Alright. Man, man, oh, man. And look at how easy that is to clean this little thing. I mean, why dirty up a big, huge machine that needs electricity and you may not have electricity you know? Alright.

Catherine: The walnuts add a lot of crunch.

Courtney: So, what did you think, Catherine, when you made this raw?

Catherine: I do. I like it raw.

Courtney: Yeah. So fresh. Gives you life. This food is life. Alright, serve you up.

Catherine: Oh yeah I need a tomato, I like tomatoes.

Courtney: You do need a tomato.

Catherine: The tomatoes are the best. That looks like a lot of tomatoes. Oh wow. I love this 

Courtney: Oh that looks good! It’s like summer, you know what I mean? Summer on a plate. It’s delicious.
