Jaime’s Nicecream Bar with special guest Jaime Yankauskas 

Courtney: Hi guys, it’s Courtney Uncooked. I’m here with my friend, Jaime, and today we’re going to show you how to make raw vegan, nice cream with three different sauces. We’re going to make a wild berry sauce, a chocolate sauce, and a caramel. So, stay tuned.

Courtney: Hi, I’m Courtney Uncooked and this is my dear friend Jaime and I am so glad to see you Jaime today. Jaime, I don’t know where he’s been for six months or so. He’s been in hiding, but buddy it’s good to see you today. What brings you out?

Jaime: Hey I appreciate you giving me a call.

Courtney: You know, I’ve called you a bunch, but you haven’t come.

Jaime: You giving me a call. Oh, you know, I don’t know I was watching TV and I guess there’s an emergency going on so I went to my room and I locked the door until you gave me a call last week. So here I am.

Courtney: Wow, so you’ve been at home for six months?

Jaime: Yeah, I’ve been saving lives…

Courtney: Wow Jaime.

Jaime: Staying home.

Courtney: Kind of like when you were in the military?

Jaime: Yeah, it’s actually kind of like doing a deployment, you know, instead of going overseas, I’m deploying to my bedroom.

Courtney: I am so proud of you.

Jaime: I got a little log book…

Courtney: I’m so proud of you.

Jaime: Every day I mark off a life I’ve saved.

Courtney: Just from staying home?

Jaime: Yeah.

Courtney: Man.

Jaime: I think 180 lives or something like that.

Courtney: Wow.

Jaime: It’s a lot.

Courtney: Wow.

Jaime: I mean, now don’t quote me on it.

Courtney: Okay, I won’t.

Jaime: I don’t want to get fact-checked. I’m not sure, …

Courtney: Okay.

Jaime: But it’s up there. 

Courtney: So, today’s your first day out. How’s it going? What’s your experience been like?

Jaime: Yes Yes. I mean, I appreciate being here now that I’m out and I guess there are some new rules I gotta follow.

Courtney: Yeah it’s a new world. Well, I know you’ve been home and you’ve been getting your groceries ordered to you.

Jaime: Yeah.

Courtney: So, I thought that I would show you…

Jaime: I just open the window and someone tosses them in. I asked for a special request.

Courtney: There you go. So, I’m going to show you how to make ice cream out of bananas because actually the last time you and I hung out, I don’t know if you remember this, we were walking in the pouring down rain in the freezing cold to Ben and Jerry’s, it was me, you, Sarah, Barb, and Carey and it was miserable. And I vowed during that walk of shame to Ben and Jerry’s that I would never do that again. And that the next time you and I had ice cream, it would be healthy and delicious. So, I know you… well, you use to go to the gym every day.

Jaime: Nah, I just stay home.

Courtney: Have you been working out?

Jaime: I stay home and I’ll be getting one of these face things.

Courtney: But how are you staying in shape?

Jaime: You just do this and you’re good.

Courtney: Jaime. Well, how are you making money if you’re staying at home? Like you got to get out, get back into the world.

Jaime: I get a check. I get a check in the mail. So I get a check, I go online, pay, stay home, you know, I mean…

Courtney: You really got it going on though.

Jaime: I think I got it figured out. So you’re going to have to help me reintegrate back into society.

Courtney: Okay.

Jaime: I do what I can. I do my best.

Courtney: I’m proud of you.

Jaime: Thank you.

Courtney: I’m really proud of you. All right. So, all we need to make this nice cream and we call it nice Jaime because it doesn’t have any cow milk in it and its very cruelty-free. So, we just have some frozen bananas here.

Jaime: Alright.

Courtney: And you want to freeze your bananas, like when they’re pretty ripe. You know, when they get the brown spots and everything, that’s when you want to freeze…

Jaime: Cool.

Courtney: Them. And so, bananas never have to go bad because you can save them for nice cream and instead of, you know, I remember I used to save bananas for banana bread, which is totally fattening and now I’m saving it for you. So, I’m saving you today.

Jaime: Fatten me up, fatten me up.

Courtney: And so, my friend, Sarah Lucento taught me this little trick. And I used to do is blend up the bananas for the nice cream, but she just adds like three fourths to a cup of milk and that’s five to seven bananas and it is delicious. You can use any sort of plant-based milk that you like. What’s your favorite Jaime?

Jaime: Kale milk.

Courtney: Kale milk?

Jaime: Yeah.

Courtney: Kale yeah, no kale no. No, I mean do you like, you know macadamia nut milk, soy milk.

Jaime: I like almond milk.

Courtney: The possibilities are endless. Look how creamy and delicious that is getting. Look at that. All right that’s good. So, we’ve got our ice cream, we’re going to let that sit there for just a couple of minutes and we’ve already made some chocolate sauce and this is delicious. And you just blend up a half a cup of soaked and drained dates, half a cup of carob powder or cacao powder, a half a teaspoon of vanilla, and one whole avocado, the meat from a nice ripe avocado, all blended up. And Voila! You have this delicious chocolate sauce, it can also be chocolate pudding, you can pop it in the freezer, it could be chocolate ice cream on its own. So, the possibilities are endless.

Jaime: Alright.

Courtney: Then we also made a mixed berry sauce.

Jaime: Oh, look at that.

Courtney: And you just want to put in some blueberries, some raspberries, and some strawberries, whatever you have on hand and blend those up with some dates and a little bit of lemon and we have this delicious berry sauce. Okay. So, what we’re going to make today though, is some caramel, some raw vegan caramel. So, I’m going to let you get started with that.

Jaime: All right.

Courtney: And so, we’re just going to add first the dates that have been soaked and strained, there you go. Almonds,

Jaime: Alright.

Courtney: A fourth a cup of milk, and then a fourth a teaspoon of salt and then another thing I also like, which I didn’t have any cashews today so I couldn’t make is Tiandra Wilde’s Fluff, the whipped cream which was in a past episode. That was great. And so that would be another fun topping to have. That is vanilla and then you’ve got a little bit of lemon juice.

Jaime: Alright.

Courtney: And then coming up and the final ingredient, it’s just going to be a tablespoon of coconut oil, a little bit of oil in this whole thing. It’s just going to be delicious. So, Jamie, why did the banana go to the hair salon?

Jaime: I don’t know, why?

Courtney: Have you been going to the hair salon? Because it had split ends, duh. All right. So you’ve got everything there, …

Jaime: Alright.

Courtney: So, now we’re just going to put the lid on our Pampered Chef blender and get it going.

Jaime: Alright. You ready?

Courtney: Yeah, good job. Yeah. Do do, do, do, do I love the sound it makes. There you go. You want to add a little bit of date water. Do you have a high-speed blender at home?

Jaime: I do not.

Courtney: It’s like the first thing you need, is a good blender.

Jaime: I have the Uber Eats.

Courtney: Uber Eats?

Jaime: Uber Eats blender.

Courtney: No more Uber Eats blender.

Jaime: I know. Now that I know how to make this.

Courtney: Right. Yeah, push it down, push it down, push it down. And that’s your caramel. Going to put a little bit more. Alright, that’s good.

Jaime: Oh, wow.

Courtney: Okay, that looks pretty good.

Jaime: Alright.

Courtney: Nice and fluffy. And that’s going to be your… yeah, give it a go. Give it a try.

Jaime: Oh, wow.

Courtney: Alright.

Jaime: Oh, wow. You know what? I’m just going to take this with me.

Courtney: You can. All right. So, we’re just going to put that in a jar and we’re going to get our nice cream bar going. I’ve got our ice cream already ready and our little ice cream scooper. Alright.

Jaime: This looks amazing. Look at that.

Courtney: Okay. So, now we can just put a little bit of each on. I’ve got my chocolate here.

Jaime: That’s probably plenty.

Courtney: I’ve got my…

Jaime: Save the rest of this…

Courtney: Strawberry.

Jaime: For dinner.

Courtney: Chocolate, strawberry, caramel. Oh, my goodness.

Jaime: Oh, wow. You sure this is healthy?

Courtney: Yeah.

Jaime: This looks delicious. In my experience, things that taste good aren’t usually healthy.

Courtney: Let’s see. That’s really good, this is healthy.

Jaime: Oh wow.

Courtney: Making a nice cream bar with my friend Jaime. I’m about to eat it all, but can you blame me? All it takes are frozen bananas and some almond milk. Just pop ’em in the blender and they turn to silk. Making caramel and berry sauce to drizzle on the top. The only thing better are the rhymes that I drop.
