Courtney: Hi, I’m Courtney Uncooked here with my dear friend and ballet teacher, Anastasia. And today we’re going to show you how to make her world-famous saucy, kelp noodles. They are delicious. You don’t want to miss this stay tuned.

Courtney: Hi, I’m Courtney Uncooked and this is my dear friend and ballet teacher, notice the tutu, Anastasia, and I am so glad to have Anastasia here because she’s like the rawest person I know who lives in this same town.
Anastasia: Yeah.
Courtney: And Anastasia and I go to all the raw food festivals together and she’s the only girl I know crazy enough to just eat tomatoes all day on a road trip and you don’t need anything else. Just like me, you’re totally happy.
Anastasia: Right.
Courtney: So we are like kindred raw vegan spirits. Well, Anastasia is from Russia and you came here to go to school, right?
Anastasia: I used to be an exchange student…
Courtney: Okay.
Anastasia: And then I would come here and work and travel and then I would go back to Russia and then I would come here and I did this twice and the third time I moved here.
Courtney: Okay, well, I’m glad you’re here.
Anastasia: Thank you.
Courtney: Okay. She teaches my ballet class, which we go to every Saturday at nine o’clock.
Anastasia: Yeah.
Courtney: It’s awesome. And we’re actually going to play a little video now of our class so enjoy and join us.

Anastasia: We have like a little community that we talk about things.
Courtney: Yeah.
Anastasia: and we also exercise, so I think it’s a good thing to keep on, right?
Courtney: Yes. So this is your number one raw vegan dish. When you went raw vegan for two and a half years…
Anastasia: Right.
Courtney: This was your go-to. So tell us what it is, let’s get right into it, and let’s make your famous kelp noodles.
Anastasia: The original recipe belongs to Chris Kendall, also known as the Raw Advantage.
Courtney: Yeah, love Chris, love his recipes.
Anastasia: Yes, he’s been raw for 12 years, and thank you so much for this recipe because it really helped me during those years. It was my go-to dish, it’s very savory and satisfying and would fill me up to dance and yeah. So it’s really easy, we will just need kelp noodles and sauce, and just a little vegetables too.
Courtney: And so you took the kelp noodles and you cut them up before we started. Yes. And we’re actually going to triple this recipe because…
Anastasia: For our team.
Courtney: It’s been talked up so much that I want to make sure we have enough.
Anastasia: Okay.
Courtney: So let’s get started. What do you want me to do first?
Anastasia: What about the kelp noodles?
Courtney: What do we do? We strain them.
Anastasia: Yeah.
Courtney: Strain them and cut them up.
Anastasia: Yeah.
Courtney: And then?
Anastasia: We cut them with what?
Courtney: Oh yes, what do you cut kelp noodles with?
Anastasia: Scissors.
Courtney: A seesaw. You’re so funny. Yes, we cut our kelp noodles with seesaws. Thank you.
Anastasia: So, we placed already our kelp noodles in the bowl, we cut them with the scissors or with the seesaw, and then now we’re going to do the sauce.
Courtney: Okay.
Anastasia: We’ll put all the tomatoes.
Courtney: Okay. So I’ll just… you just boss me around…
Anastasia: Yeah, sure.
Courtney: And I will do whatever you tell me just like I do at ballet class.
Anastasia: Exactly.
Courtney: Most of the time.
Anastasia: Yeah.
Courtney: Cucumbers.
Anastasia: Right, peeled. And I would put all the garlic as well.
Courtney: Garlic, white onions. Easy, breezy.
Anastasia: Yeah. Alright.
Courtney: We got…
Anastasia: It’s supposed to be really smooth though.
Courtney: Lemon juice.
Anastasia: Yeah.
Courtney: Yeah. I just wanted to get the volume down a little. Sorry. I don’t mean to backseat you.
Anastasia: That’s fine.
Courtney: Alright we got some tahini.
Anastasia: Raw tahini.
Courtney: Put in just a little bit of olive oil, some lemon juice.
Anastasia: This is the habanero.
Courtney: This is dried spicy habanero that you brought over. I hadn’t really used this before, so we’ll see.
Anastasia: That’s what I’ve been using all these years.
Courtney: Okay, Alright. We got salt, pepper, and garlic salt. And you said that it was important to have both garlic salt and fresh garlic.
Anastasia: Right.
Courtney: Doesn’t taste the same without it Anastasia says.
Anastasia: Yep.
Courtney: So we’ve got it all here. Alright, so we’re going to blend all of this up together right?
Anastasia: Until it’s all smooth.
Courtney: Yeah. Like smooth like no pieces of tomato?
Anastasia: Yes, exactly.
Courtney: Oh wow.
Anastasia: Yes.
Courtney: Alright.
Anastasia: Yeah.
Courtney: That’s perfect.
Anastasia: Look how smooth it is.
Courtney: It’s very smooth, very creamy.
Anastasia: Yes very creamy. That’s how it’s supposed to be.
Courtney: Yes. Okay. So now we’re going to take this and pour this over our kelp noodles. Wow. That is a lot of sauce.
Anastasia: Oh yeah. I like it saucy baby.
Courtney: Yes you do. You’re very saucy yourself young lady. Okay. And then we’re going to mix in the avocado and these olives and I’ll let you do the tomatoes and stir it up. It looks really good.
Anastasia: Oh yeah.
Courtney: Wow.
Anastasia: Oh yeah.
Courtney: I’m just going to keep stirring it up.
Anastasia: Yeah, sure. Please.
Courtney: This is my… I don’t really use kelp noodles hardly ever, so I want to… alright. So they’re really getting soft in this.
Anastasia: Yeah. They’re supposed to soak it up. The whole sauce and the whole vegetables.
