Raw Peanut butter cookies & Chocolate Mylk with special guest Santa Matt 

Courtney: Hi, I’m Courtney Uncooked here with Santa and today we’re going to show you how to make raw vegan peanut butter cookies and delicious chocolate mylk.

Santa Matt: Ho ,ho, ho!

Courtney: It is delicious. So be a good boy or girl and stay tuned.

Santa Matt: Merry Christmas, everyone.

Courtney: Hi, I’m Courtney Uncooked here with my dear friend, Santa. And Santa has come all the way from the North pole today just because I’ve been really great this year, right Santa?

Santa Matt: That’s correct. Ho, ho, ho. You barely made it on the list though. You have some improvements you need to work on. 

Courtney: Oh gosh, what do I need to do, Santa?

Santa Matt: I think you know.

Courtney: Oh, okay. I’ll get right on that. Speaking of improvements. I know last time we talked Rudolph wasn’t doing so well. Is he improving?

Santa Matt: He’s doing good now. We’ve got them on a totally raw vegan diet…

Courtney: Wow, good.

 Santa Matt: And his nose is brighter than ever.

Courtney: Nice. All right. Go, Rudolph.

Santa Matt: Yeah.

Courtney: So we can get you to Atlanta on Christmas Eve and beyond. You got to go all over the world, right?

Santa Matt: Yeah. 

Courtney: So I know you need tons of energy on Christmas Eve to get to all the good boys and girl’s houses and so, I wanted to show you how to make some healthy, raw vegan, peanut butter cookies that taste just like regular peanut butter cookies. You’re not going to believe they’re raw vegan. And some delicious chocolate milk, which you can, I just had the idea. You could put a little bit of peppermint oil or a little sprig of peppermint in it and make it mint chocolate chip milk. Wouldn’t that be good?

Santa Matt: Oh my goodness.

Courtney: Oh yes.

Santa Matt: That sounds awesome. Can’t wait.

Courtney: Yes. So we’re going to show you how to make that so that you can have the best Christmas ever Santa.

Santa Matt: Awesome. Let’s do it. 

Courtney: All right. So first we’re going to make the cookies in our food processor and then we’ll get to the chocolate milk in our Vitamix right after that. And then for the cookies, you just want to use a cup of almonds that have been soaked and strained. And I know what you’re thinking Santa, almonds in peanut butter cookies? Yes. A whole cup of almonds and we’ve got half a cup of peanut butter here. Just half a cup. And Santa, what kind of sandwiches do sharks eat? 

Santa Matt: You got to tell me.

Courtney: Peanut butter and jellyfish.

Santa Matt: Ah, ho, ho, ho.

Courtney: All right. So we’ve got half a cup of peanut butter then and a cup of pitted dates that have been soaked and strained. Put those in there and then just a little bit of vanilla. That’s it. No milk, no eggs, no sugar, no bad stuff at all. What do you make for yourself?

Santa Matt: I like to do cucumbers and vinegar.

Courtney: Me too.

Santa Matt: That’s one of my favorites. A little bit of pepper in it.

Courtney: Yes that sounds great.

Santa Matt: Great snack.

Courtney: Yes. All right. That’s starting to look really nice. And peanut butter is your favorite kind of cookie, right?

Santa Matt: It is.

Courtney: I knew it. Trying to stay on that nice list, Santa. So we’re just gonna scoop ‘em into nice little balls here on our plate.

Santa Matt: It’s looking good.

Courtney: And you don’t have to do this, but I’m going to put ‘em in the refrigerator or the freezer for a few minutes and let ‘em harden and then we’ll come back and put the crisscross on the top of them…

Santa Matt: Okay.

Courtney: And they’ll look just like good old fashioned peanut butter cookies.

Santa: Matt: And we can make the chocolate milk while we’re doing that.

Courtney: Yes, we can…

Santa Matt: All right.

Courtney: Make the chocolate milk while we let them harden up. All right, Santa. And now we’re going to make the chocolate milk. 

Santa Matt: All right.

Courtney: And this is really good. We’re just going to start off with four cups of alkaline water cause you know you got to drink healthy and great water right?

Santa Matt: That’s correct. You are right.

Courtney: And then we’ve got four tablespoons of cacao powder, and we’ve got some almond butter. And this is like so rich, thick and delicious. You can drink it immediately, I suggest putting it in the refrigerator for at least an hour, but you can. And then we’ve got a teaspoon of cinnamon, some dates here that have been so soaked and strained. Whoops! And some vanilla, all right. Okay. It’s hard cooking with these sleeves, Santa. How do you do it? 

Santa Matt: You have to work around it.

Courtney: Gosh. That’s the dates. It’s trying to get those dates blended.

Santa Matt: Oh okay.

Courtney: Those dates are dangerous Santa. So you really just want to let this go a long time to get nice and smooth, get all the pieces of dates and nuts out of it and have it nice and smooth.

Santa Matt: So what happens if you don’t have the lid on secure?

Courtney: What happens if you don’t have the lid on secured? 

Santa Matt: Yes.

Courtney: This. 

Santa Matt: Wow.

Courtney: I just think you can’t over blend this.

Santa Matt: Right.

Courtney: Like the longer, the better with this. Sounds like the Vitamix is being nice.

Santa Matt: It is.

Courtney: Sometimes the Vitamix is naughty. Oh yeah, that looks great.

Santa Matt: Oh yeah.

Courtney: Great. great, great, great, great, great. And I actually got this recipe from my dear friend, Paige Welch of Empowered Plant Cakes. I said gimme a good chocolate milk recipe because she specializes in making nut milks and so it was cool because this was actually made without any sort of nut milk it’s…

Santa Matt: Okay.

Courtney: Made with almond butter and water so it’s a quick nut milk to make instead of making the milk first.

Santa Matt: Got you.

Courtney: All right. So now we’re gonna get the cookies and start pressing our fork on them and make them look like real peanut butter cookies. Okay. So we’ve got our cookies here, we let them harden up a little and now I’m gonna just take this fork and press into the top.

Santa Matt: Oh, looking good. 

Courtney: Look at that.

Santa Matt: Oh my goodness. 

Courtney: Looks like a real peanut butter cookie, doesn’t it?

Santa Matt: It does.

Courtney: Wow, it actually does. So you can take these and you can put them in the refrigerator and let them harden up for an hour or two…

Santa Matt: Okay.

Courtney: Or you can eat them just like right now. So there you go Santa… oh, you’ve got your gloves on. Should I feed you?

Santa Matt: No, I’ll take it off. 

Courtney: Okay.

Santa Matt: I don’t want to get in trouble with Mrs. Claus.

Courtney: Okay. All right. True, true. Sorry, Mrs. Claus. It was very disrespectful and I want to stay on the nice list so…

Santa Matt: These are awesome. 

Courtney: And it tastes just like a peanut butter cookie.

Santa Matt: It does. Ho, ho, ho. This is delicious. Bernard, I’m going to bring some to you. You’ll love ‘em. 

Courtney: All right Santa, well nothing washes cookies down better than some delicious chocolate milk. What are we cheering to? To world peace.

Santa Matt: World peace. That’s good.

Courtney: That is really good.

Santa Matt: Ho, ho, ho. 

Courtney rapping: Making peanut butter cookies with my boy Santa, he’ll be eating these cookies all the way to Atlanta. He needs lots of energy to deliver the presents to all the well-behaved vegan adolescents. But it wouldn’t be complete without some chocolate milk, it washes the cookies down just as smooth as silk. No you don’t need a stove or an oven to cook. Just a blender, dehydrator, and Courtney Uncooked.

Santa Matt: Ho, ho, ho. Merry Christmas everyone. How was that Courtney?

Courtney: Great Santa. All right, Santa. I’ve really had so much fun with you today, I know you got to go, I  know you got tons of toys to make and places to be.

Santa Matt: Yes.

Courtney: But before you go, there is just one little girl who would like to talk to you. Would that be okay? 

Santa Matt: That’s fantastic. 

Courtney: Yay. Okay. Janelle, you want to come on in, sweetie? All right.

Santa Matt: Hi Janelle.

Janelle: Hi.

Santa Matt: How are you doing today? 

Janelle: Good. 

Santa Matt: What were you going to ask me for Christmas?

Janelle: I’m going to ask you if all kids could be nice to each other.

Santa Matt: Oh, that’s wonderful, Janelle.

Courtney: Wow.

Santa Matt: That is so sweet.

Courtney: Yes. Can you do that Santa? Make all kids be nice to each other.

Santa Matt: I think all kids need to try to be nice.

Courtney: Yes. 

Santa Matt: There is a nice list and you want to be on it.

Courtney: Yes.

Santa Matt: Thank you, Janelle.

Courtney: Janelle, would you like a cookie?

Janelle: Sure.
